Maybe you have tried the Plantain, an ancient staple to Latin American cuisine, at your local Cuban or Mexican Restaurant. And maybe it was soaked in oil, topped with cheese, and just a greasy mess. S and robbed of it’s nutritional benefits. Yet when cooked with the right ingredients, the Plantain is both delicious and nutritious, as well as fun to prepare. The Plantain, or Platano in Spanish, is naturally Gluten- free, Vegan, low in fat, and just yummy. My favorite version is the Platano Maduro or Yellow Plantain, that is semi-sweet and can be found at most neighborhood markets. It is usually hiding near the potatoes and onions…just waiting to be cooked! Unlike the Platano Verte or Green Plantain the Yellow Plantain is soft when cooked and adds a sweetness to any otherwise savory meal.
My favorite, Caribbean- inspired, recipe includes soft boiled eggs, the plantain, organic butter (or Coconut oil if dairy free), and half an avocado. The Plantain can also easily be boiled on it’s own and served as an accompaniment to rice and beans, or pretty much anything else.
Recipe: Caribbean Plantain Breakfast (Organic, Gluten-free)
Ingredients:
2 Large Ripe Yellow Plantains
2 Organic Eggs
½ Ripe Avocado- sliced
½ tbsp. Organic Cow’s Milk butter or Coconut oil
1) In one large pot, bring one quart of water to a boil. In a separate smaller pot, bring three cups water to a boil.
2) Add peeled plantains to large pot. Add eggs to small pot. Continue to cook eggs for 7 minutes. Continue to cook Plantains (whole) for 10 minutes until outer skin is golden yellow.
3) Remove eggs from water and cool with running water. Gently peel each egg, slice in half, and set aside.
4) Remove Plantain from water, drain, and cut into small bite sized slices. Add to serving bowl or dish and top with Organic butter.
5) Open both eggs and set on top of the Plantain. Next top with Avocado slices… Ready to serve!
And it is just that simple. This meal includes a total of four awesome, power packed ingredients, and is free of additives, preservatives, and chemicals. I have found, through my education, research, and travels, that the simplest nutrition choices are often the healthiest. And this breakfast idea is right up the aisle of whole, unadulterated, clean eating.
